Our Menu for March 11, 2013

This week’s menu plan is very fun and I can’t wait to make everything. I decided to theme some our meals around St. Patricks Day. I tried to incorporate something green in just about every meal.  To make our week even more fun, I planned activities for Little Buddy and we will be making some this fun treat for our friends.

Like last weeks menu, I’ve added what recipes are gluten free and vegetarian. Some of the recipes that do have meat in it can be replaced with meaty veggies (mushrooms or eggplant). Instead of bread, using a romaine or bib lettuce works great as a bread alternative. We did this with many of our meals last weeks: wraps, brauts and hamburgers. We were amazed how much we enjoyed it.

Here is a list of our favorite recipes from last week: beer braised chicken thighs, ranch dressing, capalini de forno , and spicy ranch burgers (recipe coming soon) and buffalo chicken quinoa fritters. If you try any of them, I feel pretty confident you will not be disappointed!

  • Banana, Strawberry and Kiwi Smoothies
  • Applesauce
  • Celery and Peanut Butter
  • Green Eggs  (I’m using this recipe as inspiration. I’ll probably make a spinach puree or pesto to color green)
