Our Menu for March 18, 2013
Last weeks menu was so fun to make and enjoy. Here is some pictures of last weeks lovely meals.
When I was preparing this weeks menu, I decided I’d keep this weeks menu simple by adding back a lot of last weeks favorites. I’m going to continue to add what recipes are gluten free and vegetarian for those of you who are looking for recipes with those ingredients. Remember some of the recipes can become meat free by eliminating them from the recipe and replacing with meaty vegetables such as mushrooms or eggplant. And for those who love a little meat, on the vegetarian dishes just add your favorite!
Lastly, my new favorite option for making some recipes gluten free is: using romaine lettuce as bread substitute. We have used romaine for Southwestern quinoa wraps, hamburgers, brauts, and chicken salad so far. I wan to try using romaine or bibb lettuce for making “tacos” and tuna salad sandwiches. We don’t have any gluten intolerances in our family, but we find that eliminating some of the bread in our diet to help with nutritional goals (adding more veggies to our diet).
