Our Menu for the Week of April 28, 2013

Last week was a very productive week around here. I had six assignments due for my class, a lot of reading and a lot of writing. It was no surprise, I couldn’t add blog writing into last week as much as I wanted to but this week is a little bit lighter load. :)

I’m always amazed at how each week is so different. Thank goodness for menu planning though because if I didn’t menu plan and plan ahead we would be eating out too often.

Well, I’m keeping our menu simple and to the basics this week, a couple new recipes join the meal plan but overall its classic favorites this week.

Breakfast

Lunch

  • Left overs
  • Tomato soup and parmesan spinach pesto flat bread
  • Avocado and chickpea wraps (subsititing bread for romaine lettuce to make it a vegetarian and gluten free meal)
  • Quinoa Wrap (vegetarian)

Dinner

Snacks

  • Homemade trail mix
  • Apples
  • Smoothies
  • Larabars (Paleo, Gluten Free, Vegetarian)
