Recipe type: Dinner
Serves: 4
  • 4 beef tenderloin steaks
  • 2 tablespoons of spicy brown mustard
  • 1 cup of red wine (3/4 cup for marinade and ¼ cup for mushrooms)
  • 1 tablespoon of olive oil
  • 1 4-ounce package of mushrooms (any variety will work)
  • ¼ teaspoon of liquid smoke
  • 1 teaspoon of dried basil
  1. For the marinade:
  2. Place beef tenderloin steaks into a small baking dish or plastic container.
  3. Spread mustard evenly to both sides of each steak.
  4. Pour ¾ cup of red wine over steak and cover with aluminum foil or lid.
  5. Place in the refrigerator for minimum 4 hours or overnight.
  6. After steaks have soaked in marinated, pre-heat a cast iron skillet on medium-high heat.
  7. Once heated, add steaks to pan.
  8. Cook for 7 to 9 minutes for medium (160 degrees).
  9. Transfer to a plate and keep warm.
  10. Add 1 teaspoon of olive oil to pan. Add mushrooms and cook until softened, then add ¼ cup of wine, liquid smoke and dried basil. Simmer for 3 minutes and spoon mushrooms over steak.
Place the steaks out in room temperature at least 20 minutes before placing into pan. Make sure pan is hot before adding the steak, this will create a seared crust on the steak.
